¾ cup organic creamy peanut butter
½ cup grass-fed butter softened
½ teaspoon vanilla extract
2-⅓ cups organic confectioners' sugar
1 cup Pamela’s gluten free graham crackers crushed
1-½ cups Enjoy Life chocolate chips
2 tablespoon coconut oil
Directions:
In a large mixing bowl, beat peanut butter, butter and vanilla until blended. Gradually beat in confectioners' sugar and graham cracker crumbs. Shape mixture into roughly 20 eggs, depending on your preferred size. Place on a waxed paper or parchment lined baking sheet. Chill 30 minutes or until firm. Melt chocolate chips and coconut oil on low heat until smooth. Dip eggs in chocolate mixture for your desired coverage. Return eggs to the baking sheet and chill 30 minutes. Store in airtight containers in the refrigerator or freezer.
