Marry Me Chicken
THIS dish! It is a creamy, flavorful chicken dish so sensational that, as the name suggests, cooking it for someone might just lead to a proposal. It's a one-skillet, crowd-pleasing meal that’s both indulgent and remarkably simple to prepare. It can be ready in under 30 minutes or in a slow cooker for 6 hours, which is what I prefer!
Ingredients:
2 pounds of organic chicken thighs
½ tsp. Celtic salt
¼ tsp. ground black pepper
6 Tbsp. GF flour (I like King Arthur)
2 Tbsp. olive oil
2 Tbso. grass-fed butter
3 cloves minced garlic
1 c. pastured organic chicken stock
1 c. organic heavy cream
½ c. grated Parmesan cheese
1 tsp. chili flakes
1/4 tsp. oregano
1/4 tsp. thyme
1/3 c. sundried tomatoes, chopped
1 Tbsp. organic basil leaves
Steps:
Season chicken with salt and pepper, then dredge in flour and shake off any excess.
In a large skillet, heat olive oil & melt the butter on medium heat.
Brown the chicken (do not overcrowd and work in batches if needed) for 4-5 minutes on each side or until golden brown and cooked through. Transfer onto a plate, cover, and set aside.
Sauté the garlic for a minute or until it's fragrant. Add the chicken stock, and deglaze the pan.
Adjust the heat to medium-low, and add the heavy cream and the parmesan cheese to the skillet. Allow the sauce to simmer for a couple of minutes, then season with chili flakes, thyme, and oregano.
Season with salt and pepper to your taste, add the sundried tomatoes, then put the chicken back in the sauce and let the sauce simmer and thicken for a few more minutes.
Garnish with chopped fresh basil leaves & serve warm over pasta or rice.
If using a slow-cooker, I add everything into the pot (except the basil and I add the heavy cream at the end) and let go for 4-6 hours!
