Gluten Free Breakfast Bites

Looking for a quick, easy breakfast? These bites are a delicious and satisfying way to start your day! Made in a muffin tin, each bite features a crispy gluten-free toast base, a savory strip of bacon, and a perfectly baked egg nestled on top. They're portable, protein-packed, and ideal for busy mornings, brunch gatherings, or meal prep. Customize with cheese, herbs, or veggies for added flavor and nutrition!

Ingredients:

12 Slices of Applegate bacon

12 slices of Schar gluten-free bread

1 dozen free-range eggs

3/4 cup grassfed milk

Himalayan salt

Pepper

Instructions:

Thoroughly grease a muffin tin. I prefer to cook the bacon in the oven at 425 for 15-20 minutes, depending on how crispy you like it. While the bacon is cooking, use a round cookie cutter to cut out the center of the bread slices so they fit in the bottom of the muffin tin. Once the bacon is cooked, place the cut-out bread in the bottom of each muffin cup and wrap the bacon around the bread. In a mixing bowl, whisk together the eggs, milk, salt, and pepper, then pour into each muffin cup. Bake at 375 for 25 minutes. I like to freeze these bites to have ahead of time for the kids!
